  • 1 box dark chocolate cake mix
  • 2 tbsp espresso powder
  • 2 eggs
  • 1/2 c vegetable oil
  • 1/3 c dark chocolate chips
  • 1 stick of salted butter
  • 2 c powdered sugar
  • 1/2 tsp almond extract
  • 23 tbsp maraschino cherry juice
  • 1/4 c mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
  2. In a medium bowl, combine the cake mix, espresso powder, eggs, and vegetable oil. Once mixed, fold in the dark chocolate chips.
  3. Using a small 1” cookie scoop add scoops of the dough to the prepared baking sheets 2” apart. If you don’t have a cookie scoop they’re about 1 tbsp size scoops. You’ll get about 22 cookies or 11 cookie sandwiches.
  4. Bake for 9-11 minutes or until set. These are best on the softer side, which is ideal for a cookie sandwich. Let the cookies set on the pan for 10-15 minutes and then move to wire racks to cool completely.
  5. Once cool, prepare the frosting. In a mixing bowl, beat the butter until smooth. Either use a hand mixer or stand mixer. Add in half of the powdered sugar and mix. Add in the rest of the powdered sugar, almond extract, and cherry just and mix until totally combined. Fold in the mini chocolate chips.
  6. Place one cookie upside down and pipe or scoop frosting in the center. Top it with another cookie and lightly press down. Repeat with the remaining cookies.
