Ingredients: 2 tbsp shallots, finely minced; 1 clove of garlic, finely minced; 1/3 cup champagne vinegar; 1/2 cup canola oil; 1/4 tsp salt; 1/4 pepper; 2 T Dijon mustard; 2 T honey; 1 bag or container of romaine lettuce; Rotisserie chicken, cut into small pieces (approx 2 cups); 1/2 c- 1 c feta cheese; 1/2 c walnuts; 1/2 c chopped apples

2 packages of puff pastry shells
1 package of Boars Head Honeycrisp Chicken Sausage OR another apple sausage brand
1 tbsp vegetable oil
1/2 cup chopped white onions
1/4 c chicken broth
1/2 c freshly shredded mozzarella

Instructions

On a rimmed baking sheet, bake the pastry shells according to the package instructions
In a medium saute pan over medium high heat, add the oil and onion. Saute until translucent, about 8 minutes.
Break up the sausage and crumble it into the pan. Saute for 5-8 minutes.
Add the chicken broth and the mozzarella and simmer for about 2 minutes, stirring until the cheese is melty.
Spoon the mixture into the shells and serve immediately.
