I’ve been a longtime Mario Brothers fan, so I’m counting down to the second movie. I created these Mario Galaxy Cookie Bars just in time to celebrate. You get a soft chocolate chip cookie base, a swirled galaxy layer that bakes up a little gooey, and those cute Yoshi cookies sitting right on top. Add a sprinkle of sparkly stars and you’re ready for the new Mario Galaxy movie.

These bars are rich and buttery with that classic chocolate chip cookie flavor as the base. The sweetened condensed milk adds a creamy sweetness that melts right into the layers, while the white chocolate gives little pockets of smooth, sweet bites throughout. Everything blends together into a soft, slightly gooey center with a golden, lightly crisp edge.

The galaxy swirl made with tinted sweetened condensed milk is what makes these stand out. Instead of just layering cookies, you get this vibrant blue and purple swirl baked right into the center, creating a soft, gooey layer that looks like a mini galaxy running through each bar.

Can I use regular sugar cookie dough instead of the Yoshi shapes?
Yes, just scoop or slice pieces and place them on top. You’ll still get the same layered effect.
Do I have to use both blue and purple?
No, you can use one color or switch it up depending on your theme.
How do I know when they’re done?
The edges should be golden and set, while the center stays soft but not raw.
Can I make these ahead of time?
Yes, they hold well for a couple of days in an airtight container.
Do they need to be refrigerated?
Not required, but you can chill them if you prefer a firmer texture.

Make these, put on Mario Galaxy, and turn it into a fun little pre-movie night while you get excited for the new release
