I’m officially obsessed with skillet desserts, and this “It’s My Birthday Brownie Skillet” might just be my favorite. Honestly, I’m ready to celebrate my un-birthday all year long just for an excuse to make it. If you’ve seen that classic Cheers episode where everyone chimes in, “It’s my birthday too!”—well, I’m right there with them.
This skillet dessert starts with brownie batter loaded with sprinkles, gets a layer of chopped Birthday Cake Lindor Truffles in the middle, and is topped off with more brownie batter. Once it’s baked and all gooey, you pile on your favorite ice cream, drizzle it with chocolate fudge, and, of course, sprinkle on even more sprinkles.
It’s perfect for every season because, after all, it’s always someone’s birthday!

Tip: If you’re not sharing or want leftovers, scoop your portion into a bowl and add your ice cream. Store the rest in an airtight container, and when you’re ready for round two, just reheat it in the microwave. It’s just as delicious the next day!
