It was one of those perfect Florida summer evenings—warm but breezy, with just enough of a glow in the sky to make everything feel a little extra magical. We headed to Epcot for what turned out to be a mini food adventure full of surprises, laughter, and some truly standout snacks.

First stop: a bright, bold drink with a name just as playful as its presentation—Goofy’s Gone Fishing Lemonade. This limited-time drink is part of the new Cool Kid Summer lineup at CommuniCore Hall, and it totally lives up to the theme.
The lemonade base is blue raspberry, with strawberry boba pearls that burst with flavor and a scoop of gummy fish and sharks on top. While it’s not actually served in a fishbowl, it still looks adorable in its clear cup.
The flavor was a hit—sweet, tart, and super refreshing. The only slight miss was that the gummy candies got a bit too firm from the cold drink, but it didn’t stop my daughter from fishing them out with her straw and declaring it her favorite drink of the summer.

We also got another Cool Kid Summer item—Mac and Cheese Bites. And wow. I wasn’t expecting anything beyond average theme park food, but these were seriously good.
Golden and crispy on the outside, with a creamy, cheesy mac center, they hit that comfort food sweet spot. The portion was generous, and while they came with ranch on the side, they honestly didn’t need it. The bites had plenty of flavor and were cheesy in the best way—the kind of cheesy that stretches and melts, not disappears into the breading.
We didn’t just finish them. We fought over the last one. It’s one of those snacks that looks made for kids but totally wins over adults too.
After our snack stop, we headed over to Journey Into Imagination with Figment. This ride is a forever favorite. I love that Figment is finally getting the attention he deserves.
Next up was Mexico for the Gran Fiesta Tour Starring The Three Caballeros. It’s such a fun, mellow boat ride, and they had so much cute new merchandise in the pavilion. I’ve got my eye on a Mexico-themed shirt with Daisy and Minnie that I definitely need to add to my collection.
We wrapped up our night in the Italy pavilion, where everything looked extra stunning in the night lights The servers were beyond sweet, and we split a Caesar salad and what might just be the best pizza we’ve ever had at Disney. One of the servers told us how amazing it was, and they were right—it was the perfect way to end the night.
