Loaded Cake Mix Cookies

These are an easy classic recipe that I’ve made so many times over the years. These are full of mini chocolate chips and mini M&Ms, but feel free to put your own twist on them! And bonus, they’re super easy for kids if you have little helpers in the kitchen.

THE STORY: Someone gave me this recipe years and years ago before social media was a thing. I thought it was so revolutionary at the time, lol! I’ve made these so many different ways, but this is a classic version that everyone seems to love.

TIPS: If you underbake these they’ll be super soft. Honestly…that’s not half bad because the softer ones make amazing cookie sandwiches and ice cream cookie sandwiches. So, in my opinion, you can’t go wrong with these. And let me know if you try the ice cream sandwich. It is so so good!

SPRINKLE OF CREATIVITY: I love love love using the seasonal Funfetti mixes for these cookies. They add a color and theme to them without having to do any extra work!

Ingredients

• 1 box of white cake mix
• ½ cup vegetable oil
• 2 large eggs
• ½ cup mini semisweet chocolate chips
• ⅓ cup mini M&Ms

Instructions

1. Preheat the oven to 350 degrees F and line two cookie sheets with parchment paper. I love the pre-cut parchment sheets. I buy one case at a time, and it’s such an unexpected time saver.
2. In a medium bowl, combine the cake mix, oil, and eggs and mix until it’s all fully combined. Fold in the chocolate chips and M&Ms.
3. Using a 1 ¼ inch cookie scoop, place 1 tablespoon-size scoops of dough onto the baking sheets about 2 inches apart. Press a few extra mini chocolate chips onto the top of each cookie.
4. Bake for 11-13 minutes or until the edges golden brown.
5. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. If you like warm chocolate chip cookies, eat them right away, I totally get it! If you’d like them to have a soft and chewy consistency be sure to let them cool all the way. They’re worth the wait!
