I’ll be honest with you, I never got the hype about mug cakes. I always thought, I’d rather just have a slice of cake with frosting. That was until I tried this one WITH ICE CREAM. It has a chocolate base with chocolate chips and I added a scoop of vanilla ice cream with mini marshmallows on top. It was life changing. And it really is nice to have something sweet that involves such a small amount of effort!
THE STORY: I wanted to make something for winter that had a snowy/frosty feel to it. I found these cute character marshmallows and thought- how cute would they look on a chocolate cake. Since they were meant to be hot cocoa toppers, I combined the two. I created a cake with a hot cocoa vibe, topped it with ice cream (my favorite), and added tons of marshmallows, including those cute little guys.
TIPS: Be sure to check it at one minute. A friend of mine made this and hers was ready at a little after a minute, but mine took 30 seconds extra.
SPRINKLE OF CREATIVITY: If I had cookies and cream ice cream or chocolate-marshmallow swirl, I would have totally used that! Use your favorite chocolate cake pairing, and also feel free to add extra toppings like hot fudge and sprinkles.
