I am not sure what to call these…s’mores have marshmallow and these have cheesecake, so maybe Graham Cracker Sandwiches? Either way, they’re a fun holiday treat that combines the crunchy goodness of graham crackers with an easy and extremely tasty Oreo cheesecake filling. The chopped Hershey’s Candy Cane Kisses add a burst of minty-chocolate flavor, creating the most perfect balance. To top it all off, a cute peppermint bark snowman adds a whimsical (and delicious) touch to the newest version of my s’mores/cracker projects!
Ghirardelli snowmen like these and they should have them at Target or Walmart
Instructions
Heat Ghirardelli melts in the microwave for 30 second intervals until melted, stirring between each interval. Usually they take 1 minute 30 seconds.
Fill the molds 1/3 of the way with the chocolate. Be sure to cover the full bottom of each cavity. You might have to tap the mold a little to get it to spread.
Add the first graham cracker and press lightly so that the chocolate seeps over the edges a tiny bit.
Pipe or spoon Oreo cheesecake into the center of the cracker. Spread it but make sure it doesn’t reach the edges. The second cracker will push down on the filling a bit.
Top with chopped candy cane kisses.
Add the second graham cracker on top and push down so that there is space to fill the rest of the mold with the chocolate.
Pour any extra chocolate needed to fully cover the cracker.
Tap the mold on the counter only when they are all filled!! Do not tap until each cavity is filled with the s’mores/sandwiches.
If needed, using a fork or knife, lightly press the cracker back down if it rose to the top.
Using an offset spatula or a flat knife, scrape the back of each s’more, making sure the back is smooth.
Place in the fridge for 30 minutes, minimum.
Remove the mold and flip it over onto a cutting board or a cookie sheet lined with parchment. Using your thumb, lightly press on the back of each cavity. The heat from your finger will release the s’more.
Heat more melts in the microwave and brush a tiny bit onto each snowman. Press the snowman onto the center of the s’more/sandwich.
Repeat with all 4 s’mores. Serve at room temperature.
