This Oatmeal Creme Pie Banana Pudding Trifle is one of my favorite recipes from my book, Just Add Sprinkles. I created this version with a little Easter twist. It’s got soft oatmeal creme pies, fluffy banana pudding, fresh bananas, and whipped topping—all layered into one tifle dessert. Add sprinkles, Peeps, or chocolate eggs to make it extra fun!
This recipe comes straight from my cookbook, Just Add Sprinkles, and it’s one of my absolute favorites. I love giving my go-to desserts a little holiday glow-up, and this one was just perfect for an Easter twist.
The original version is perfect all year long, but for Easter, I added Peeps, pastel candy, and—of course—sprinkles. It’s low-effort, high-impact, and always a crowd-pleaser. Bring it to a potluck, a spring get-together, or a dinner with friends and watch it disappear.
Make sure to refrigerate the pudding mixture overnight. It’s thinner than regular pudding, and it needs time to fully set up. I promise you, it’s worth it. It makes the oatmeal creme pies even softer and it has the sweetest creamiest texture.
Not a fan of Oatmeal Creme Pies? Totally fine. Swap in another snack cake, go classic with Nilla Wafers, or try gingersnaps for a spiced twist. It’s a flexible trifle so make it your own! It’s still just as fun.
Can I make this in advance?
Yes! You can make the pudding mixture the night before and assemble the full trifle a few hours before serving. The pies soften over time, so it’s even better when it sits a bit.
Do I need to use Oatmeal Creme Pies?
They’re the star here, but you can substitute with soft oatmeal cookies and a layer of marshmallow fluff or whipped cream in a pinch.
How do I keep the bananas from turning brown?
Toss sliced bananas in a bit of lemon juice to slow down browning, especially if assembling more than a few hours in advance.
Can I make this trifle for something other than Easter?
Totally! Just skip the Peeps and candy eggs and it becomes a delicious, all-year dessert. Try caramel drizzle or crushed toffee for a fall version.
What size dish should I use? A standard trifle bowl or large glass bowl works perfectly. You can also make mini versions in mason jars or clear cups for parties.
Bring this to Easter brunch—it’s perfect for feeding a crowd. It’s one of those desserts that disappears fast because both kids and adults go back for seconds. Let the kids pick the Peeps off the top (because you know they will), and don’t be surprised if someone asks for the recipe before the meal’s even over.
