This Pink Party Jelly Bean Bark is an easy, no-bake treat that brings major color and texture. Made with swirled chocolate, marshmallow melts, frosted animal cookies, and jelly beans, it’s a fun way to put a spin on regular chocolate bark. And it’s so easy, anyone can make it! Just melt, mix, and try not to eat the whole tray before it sets.
I’ve always loved chocolate-covered gummy bears, but I didn’t even think to try jellybeans. When I started playing around with this bark, I was focused on color, texture, and something fun—and it all just came together.
I started with crushed Mother’s Frosted Animal Cookies because they’re nostalgic, colorful, and already coated in white chocolate. To balance that, I used melted milk chocolate as the base layer. The contrast worked perfectly—sweet, crunchy, and just the right amount of creamy.
Next came the marshmallow melts. They added a swirl of white that gave the bark a little visual pop and paired well with the cookies. And then… the sparkle. I used Bakery Bling Glittery Sugar—which honestly lives up to its name. Bakery Bling sells all kinds of edible glitter, glitter sugars, and shimmer toppings that add so much sparkle to desserts.
The finishing touch was jellybeans of course. I found Barbie-themed ones that were all shades of pink, and they were too perfect not to use. It was my first time trying them with chocolate and I’m officially converted—they add a sweet chewiness that totally works with the chocolate base.
Bark is basically foolproof. It’s no-bake, comes together in minutes, and kids can totally help—from sprinkling toppings to swirling chocolate. Plus, when you load it up with cookies and candy, it becomes surprisingly filling. Dessert and snack- check off both boxes!
Turn this into a full-on Barbie night with the kids. While the bark sets in the fridge, set up a little movie station with blankets, popcorn, and anything pink you can find. Let the kids help with the fun parts—crushing the cookies, adding sparkly sugar, and dropping the jellybeans wherever they want (no pattern required). Once the bark’s ready, break it into pieces, pass it around, and hit play on the Barbie movie. It’s messy, sparkly, and the perfect excuse for a candy-filled movie night.
