These KitKat cookies are made two different ways, but the possibilities are endless! I did a classic KitKat + milk chocolate chip combo and a Churro KitKat + white chocolate chip combo. If you can’t find the Churro flavor, just sub the regular white version. The perfect cookies for a summer movie night!
2 sticks of butter, 1 salted and 1 unsalted, softened
2/3 c brown sugar
1/2 c white sugar
2 eggs
1 tsp vanilla extract
2 1/4 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1/3 cup white chocolate chips
1/2 c chopped Churro or white chocolate KitKats
1/3 cup milk chocolate chips
1/2 c chopped classic KitKats
Instructions
Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper.
In a medium bowl, beat the butter, brown sugar, and white sugar until fluffy. Add eggs one at a time, mixing between each addition. Beat in the vanilla.
Combine the flour, baking soda, and salt in a bowl. Add half to the butter mixture and mix. Add the rest and beat until completely combined.
Split the dough into two bowls. Add the white chocolate chips and white/Churro KitKats to add bowl and fold and until incorporated. Add the milk chocolate chips and classic KitKats to the other and repeat.
Using a small cookie scoop (about 1 tbsp full) or a measure spoon, place the dough 2″ apart on the sheets.
Bake for approximately 9-10 minutes or until lightly golden brown. Let them cool on the sheets for 5 minutes then transfer to racks to cool.
