This magically delicious Lucky Charms Cookie Skillet is a warm, gooey, rainbow-sprinkled dessert loaded with soft sugar cookie dough, chunks of Lucky Charms cookies, and those irresistible cereal marshmallows. It’s served warm in the skillet and topped with green vanilla ice cream and even MORE marshmallows and sprinkles. You might actually catch a leprechaun this year if you leave this dessert out as bait 😉
I make a lot of cookie skillets on my social pages and blog, and they’re always a hit! (Which makes me so happy!) They’re warm, gooey, and totally customizable for any holiday or theme. You can mix and match cookies, add your favorite ice cream and toppings, or even do a half-brownie, half-cookie mashup. There’s nothing better than a crispy-edged, soft-centered cookie straight from the oven with a scoop of melty ice cream on top!
If you’ve never tried the Lucky Charms cookies before, they taste just like the cereal’s marshmallows. I wanted to balance that flavor, so I mixed them with sugar cookie dough to keep the marshmallow from being too overpowering. Instead of going with the usual green theme for St. Paddy’s, I switched it up and went hot pink for the cookie, saving the green for the ice cream. (Pink and green are everywhere this year… ahem, Wicked. 😉)
I tinted vanilla ice cream green, but you could also use mint or pistachio for an extra flavor boost. The cookie itself is a simple, sweet base, so any topping works! I added extra sprinkles for crunch (and a rainbow nod to that pot of gold) plus more cereal marshmallows. Did you know they sell those by themselves now? They add the best texture—warm cookie, melty ice cream, crunchy sprinkles, and that light, crispy pop from the mini marshmallows.
If you’re digging in right away, let the ice cream melt over the warm cookie for pure gooey perfection. If you want to save some for later, just cut out the piece you want, top it with ice cream in a bowl, and store the rest in the fridge. When you’re ready for round two, pop it back in the oven for a few minutes to bring back that fresh-baked cookie perfection!
If you’re a Lucky Charms lover like me, this skillet its perfect for St. Paddy’s Day or, well, any time you want that magically delicious flavor 🍀🌈🍪
1. Can I use homemade sugar cookie dough instead of a mix?
Yes! You can swap the mix for your favorite homemade sugar cookie dough. Just be sure to keep the texture soft for a gooey skillet.
2. How do I prevent the marshmallows from burning?
Use only a few marshmallows on top and add them toward the end of baking if you want them extra soft.
3. What size skillet should I use?
A 9-inch oven-safe skillet works best for this recipe. If you use a different size, just keep an eye on it when it bakes!
4. Can I make this ahead of time?
It’s best served warm, but you can bake it ahead and reheat in the oven for a few minutes before serving.
5. What ice cream flavors go best with this?
Vanilla with green food coloring keeps it festive, but birthday cake or marshmallow swirl would be delicious too!
Lucky Charms Cookie Skillet + a Movie!
My dream night for St. Paddy’s Day isn’t at a bar…it’s at home enjoying this warm, gooey Lucky Charms Cookie Skillet and a fun movie night! Have you seen Irish Wish on Netflix? If not, grab a spoon and hit play. I actually LOVED this movie. It’s a Lindsay Lohan’s rom-com where she wishes for true love and wakes up engaged… just not to the right guy. It takes place in Ireland and makes me want to travel so bad. It’s just one of those perfect feel-good movies, so I highly suggest whipping up this treat giving this movie a try. It makes me remember why I loved Linday Lohan so much back in the day!
