Preheat the oven to 350°F. Line an 8×8 pan with parchment paper or lightly grease it.
In a bowl, whisk the melted butter and brown sugar until smooth and glossy. Add the egg and vanilla and whisk until fully combined.
Stir in the flour and baking powder just until combined. The batter will be thick.
In a separate bowl, mix the strawberry cream cheese, granulated sugar, and vanilla until smooth. Add pink food coloring if you want a brighter center.
Press about half of the blondie batter evenly into the bottom of the pan.
Spread the strawberry cream cheese mixture over the base layer.
Take the remaining blondie batter and flatten small pieces in your hands. Place the flattened pieces over the cream cheese layer, covering as much as you can. It does not need to be perfect. Some pink peeking through is completely fine.
Sprinkle pink glittery sugar over the top.
Bake for 22 to 26 minutes, until the edges are set and the center is slightly soft.
Cool completely before slicing so the layers set up properly.
