Sweet and Savory Pulled Pork

  • 34 lbs boneless pork butt
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 tbsp unsalted butter, divided
  • 6 cloves garlic, minced
  • ¼ cup honey
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • ½ cup chicken broth
  • 1/2 tsp dried thyme
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

  • Pat the pork dry and season with salt and black pepper.
  • Heat the olive oil in a pan over medium-high heat.
  • Sear the pork for 2-3 minutes per side until it’s golden brown.
  • Place the seared pork in the slow cooker.
  • In a small saucepan over medium heat, melt 2 tbsp of butter.
  • Add the garlic and sauté for 30 seconds or until fragrant.
  • Stir in the honey, soy sauce, Dijon mustard, chicken broth, and thyme.
  • Pour the mixture over the pork in the slow cooker.
  • Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours) until the pork is fork-tender.
  • Remove the pork to a cutting board and shred it with two forks.
  • Skim the sauce in the slow cooker to remove excess fat, then stir in the remaining 2 tablespoons of butter until fully incorporated.
  • Mix the cornstarch and water and stir it into the sauce. Turn the slow cooker back on and let it cook for 5 minutes to thicken.
  • Toss the shredded pork back into the slow cooker to soak up the flavors.
