Sunshine Lemon Chicken & Rice Soup

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 6 cups chicken broth
  • 2 cups rotisserie chicken, shredded
  • 1 cup cooked white rice
  • Zest of ½ lemon
  • 2 to 4 teaspoons fresh lemon juice, depending on how much lemon flavor you prefer
  • Salt and black pepper, to taste
  • Fresh parsley, optional

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the garlic and oregano and cook for about 30 seconds until fragrant.
  2. Pour in the chicken broth and bring the mixture to a gentle simmer.
  3. Stir in the shredded chicken and cooked rice. Let everything cook for a few minutes until warmed through.
  4. Remove the pot from the heat and stir in the lemon zest and 2 to 4 teaspoons lemon juice, depending on how bright you want the flavor.
  5. Season with salt and black pepper to taste. Garnish with fresh parsley if desired and serve warm.
