Cupcakes

  • 1 box Funfetti Celebrations cake mix (plus ingredients listed on box)

Frosting

  • 2 sticks salted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 teaspoon almond extract
  • 46 tablespoons heavy cream
  • Pink food coloring

Toppings

  • Mini sprinkle waffle cones (or regular mini cones)
  • Sprinkles (use the ones included with the cake mix)

Instructions

  1. Preheat your oven to 350°F and line a cupcake pan with cupcake liners.
    Prepare the cake mix as directed on the box. Fill liners 2/3 full and bake according to the package directions. Let them cool completely.
  2. Beat softened butter until smooth. Add half the powdered sugar and mix until incorporated. Add remaining sugar, vanilla, almond extract, and heavy cream (start with 4 tbsp and increase as needed for desired consistency). Beat until light and fluffy.
  3. Divide frosting into two bowls. Tint half pink and leave the other half white. Transfer the white frosting to a piping bag fitted with a round tip and the pink frosting to a piping bag fitted with a star tip.
  4. Pour the sprinkles into a shallow bowl. Pipe a swirl of white frosting onto each cupcake, then gently dip and roll the top in sprinkles to coat. Pipe a pink swirl on top of the sprinkle-covered base.
  5. Finish each cupcake with a mini sprinkle waffle cone.
