Santorini Balsamic Flatbreads

Ingredients

  • 2 naan or pita breads
  • 1/2 cup hummus (garlic, lemon, or roasted red pepper)
  • 1 cup rotisserie chicken (shredded) or prosciutto
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 red onion (thinly sliced)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup roasted pistachios (chopped)
  • Balsamic glaze (recipe in notes)
  • Optional: Dried figs
  • Olive oil & lemon for drizzling

Instructions

  1. Preheat the oven to 400°F and toast the naan or pita for about 5 minutes until warm and slightly crisp.
  2. Spread a generous layer of hummus over each flatbread, then top with chicken (or prosciutto), cherry tomatoes, red onion, and crumbled feta.
  3. Pop it back in the oven for another 3–5 minutes until everything is warmed through.
  4. Finish with a drizzle of balsamic glaze, a sprinkle of crunchy pistachios, and, if you like a touch of sweetness, some dried figs.
  5. Just before serving, add a final drizzle of olive oil and a squeeze of fresh lemon!

Notes

Balsamic Glaze Recipe:

  • 1 cup balsamic vinegar
  • 2 tbsp honey or maple syrup

Directions:

  1. In a small saucepan over medium heat, bring the balsamic vinegar to a gentle simmer.
  2. Stir in the honey or maple syrup.
  3. Let it cook, stirring occasionally, until the mixture reduces by about half and thickens to a syrupy consistency (about 10–15 minutes).
  4. Remove from the heat and let it cool—it will continue to thicken as it sits.
