Pumpkin Pasta Sauce

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce 
  • 1 cup pumpkin purée 
  • ½ teaspoon dried oregano
  • ¼ teaspoon cinnamon (optional, very light)
  • Salt and pepper, to taste
  • Grated parmesan for serving

Instructions

  1. Heat the olive oil in a saucepan over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Stir in marinara sauce and pumpkin purée. Mix well until smooth.
  3. Season with oregano, a tiny pinch of cinnamon, salt, and pepper.
  4. Simmer for 10 minutes, stirring occasionally.
  5. Toss with pasta and sprinkle with parmesan.
