Preheat the oven to 350 degrees. Spray a 9” skillet with cooking spray.
Press the pumpkin cookie dough into the bottom of the pan. Remove the 7-8 pumpkin cookie dough discs from the package and evenly press them (very lightly) on top of the cookie dough.
Bake for 17-19 minutes or until lightly golden brown. It will appear ever so slightly underbaked in the center but the edges should be set.
Top with scoops of vanilla ice cream, drizzle with caramel syrup and add glazed pecans
If you’d like to eat the cookie cold instead of warm, let it cool completely in the skillet and then add the ice cream and toppings.
