1 box sugar cookie mix (or your favorite homemade recipe)
1/2 cup butter, melted
1 egg
2 tbsp thawed lemonade concentrate
Zest of 1 lemon
1/4 cup white chocolate chips
Lemonade Filling:
1/4 cup lemon curd
1 tbsp thawed lemonade concentrate
Pink Lemon Frosting:
1/2 cup butter, softened
2 cups powdered sugar
2 tbsp thawed lemonade concentrate
1–2 tbsp heavy cream
Pink food coloring
Yellow sprinkles
Instructions
Preheat the oven to 350°F. Line an 8×8-inch pan with parchment paper and spray it with baking spray.
In a mixing bowl, combine the sugar cookie mix, butter, egg, 2 tbsp of lemonade concentrate, and lemon zest. Fold in the white chocolate chips. Spread HALF of the cookie dough into the bottom of the pan.
Mix the lemon curd and 1 tbsp of lemonade concentrate and then spread it over the cookie dough.
Crumble the remaining cookie dough over the top and gently press down.
Bake it for 18-22 minutes until golden. Cool completely.
In a mixing bowl, beat the butter until smooth. Add in the powdered sugar, 2 tbsp of lemonade concentrate, and heavy cream as needed. Once mixed, tint the frosting with pink food coloring to your desired shade. Spread over the bars.
Top with yellow sprinkles and chill for at least 2-3 hours.
