Lasagna Roll-Ups

  • 12 lasagna noodles
  • 1 1/2 cups ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 2 cups marinara sauce plus extra for serving
  • 1 teaspoon Italian seasoning
  • 1 cup cooked ground beef

Instructions

  1. Preheat the oven to 375°F and spray a 9 x 13 baking dish lightly with baking spray.
  2. Cook lasagna noodles according to package instructions. Drain and lay them flat on parchment paper to cool.
  3. In a bowl, mix the ricotta cheese, egg, Parmesan, mozzarella, and Italian seasoning. Add cooked ground beef and stir.
  4. Spread a thin layer of the ricotta mixture onto each lasagna noodle. Roll each one up tightly and place seam-side down in the prepared baking dish.
  5. Pour the marinara sauce over the roll-ups, ensuring each is covered. Sprinkle with additional mozzarella cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5–10 minutes until the cheese is bubbly.
  7. Serve with extra marinara sauce on the side.
