  1. Preheat the oven to 350°F. Line an 8-inch square pan with parchment paper, leaving a slight overhang, and lightly spray.
  2. In a large bowl, whisk the melted butter and brown sugar until smooth and glossy. Add the eggs and vanilla and whisk until fully combined.
  3. Stir in the flour, baking powder, and salt just until incorporated. Do not overmix. Add pink gel food coloring and gently mix until evenly tinted.
  4. Fold in the white chocolate chips and Valentine sprinkles. Spread the batter evenly into the prepared pan. Gently press frosted Valentine animal cookies and heart sprinkles on top.
  5. Bake uncovered for 18 minutes. Remove the pan from the oven and loosely tent the top with foil, making sure the foil does not touch the cookies.
  6. Return to the oven and continue baking for another 10 to 14 minutes, until the edges are lightly golden and the center is just set. A toothpick inserted should come out with a few moist crumbs.
  7. Remove from the oven and let cool completely in the pan. Once cooled, lift out using the parchment and slice into bars. The blondies will firm up into thick, chewy squares as they cool.
