Party Chip Cookie Sandwiches

  • 1 box Betty Crocker Party Rainbow Chip Cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 stick of salted butter
  • 2 cups powdered sugar
  • 2 tbsp Nutella
  • 2 tbsp cocoa powder
  • 23 tbsp heavy cream
  • Rainbow sprinkles, optional

Instructions

  1. Preheat the oven to 350 and line cookie sheets with parchment paper.
  2. In a medium bowl, combine the cake mix, eggs, and vegetable oil. If it’s really warm or humid out, refrigerate the dough for about 15 minutes.
  3. Using a small cookie scoop (about 1 tbsp size), add dollops of dough to the prepared sheets. Bake for approximately 10-12 minutes. Be sure not to over bake so that the cookies stay soft. Let the cookies cool completely.
  4. In a mixing bowl, beat the butter until smooth. Add in half of the powdered sugar and mix. Add in the rest of the sugar, Nutella, cocoa, and cream. Mix until smooth. Add extra heavy cream 1 tbsp at a time if it’s too thick.
  5. Add a layer of buttercream to one cookie, making sure to flip it over and top it with another. Roll in rainbow sprinkles, if desired. Repeat with the remaining cookies. There should be 11 cookie sandwiches total.
