For the cupcakes

  • 1 box white cake mix
  • 4 large egg whites
  • 1 cup whole milk
  • 1/3 cup oil
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • Orange food coloring

For the frosting

  • 2 sticks salted butter, softened
  • 3 1/2 cups powdered sugar
  • 46 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 to 1 teaspoon orange extract (start with 1/2 and adjust to taste)
  • Orange food coloring

For topping

  • White sprinkles

Instructions

  1. Preheat oven to 325°F. Line a cupcake pan with white liners.
  2. In a large bowl, combine the cake mix, egg whites, milk, oil, sour cream, vanilla, and a few drops of orange food coloring.
  3. Mix on medium speed for 2 minutes until smooth and slightly fluffy.
  4. Fill each liner about 2/3 full.
  5. Bake according to package directions, checking for doneness with a toothpick. Let cool completely before frosting.
  6. For the frosting, beat the butter until smooth and creamy.
  7. Add powdered sugar, heavy cream, vanilla, orange extract, and orange food coloring. Beat until light, fluffy, and spreadable. Adjust cream as needed for texture.
  8. Pipe or spoon frosting onto each cupcake.
  9. Finish with white sprinkles.
