Mediterranean Picnic Wraps

Makes 2 wraps

  • Lemon and olive oil- you’ll need a squeeze of lemon and drizzle of oil
  • 1 1/2 cups rotisserie chicken (shredded)
  • 2 large whole wheat wraps
  • 1/2 cup tzatziki
  • 1 cup chopped romaine lettuce
  • 1/2 cucumber (sliced)
  • 1/4 cup cherry tomatoes (halved)
  • 1/4 red onion (sliced)
  • 1/4 cup feta cheese (crumbled or marinated feta cubes)
  • 1 cup pita chips (crushed) if desired
  • Optional: Pepperoncini or pickles (chopped)

Instructions

  1. Toss the chicken with a squeeze of lemon juice and drizzle of olive oil.
  2. Spread the tzatziki sauce inside each wrap, using 1/4 cup on each one.
  3. Fill each wrap with the chicken, lettuce, cucumber, tomatoes, onion, and feta. These wraps have a lot of filling, so make sure that you have the larger wraps and you really pack them tightly with the filling.
  4. If desired, you can sprinkle crushed pita chips inside for crunch or serve them on the size! There’s a homemade pita chip recipe on the last page.
  5. Add the pepperoncini or pickles if you’re using them.
  6. Wrap each one tightly and serve with a lemon wedge.
