Ingredients

  • 1 (8 oz) block of cream cheese, softened
  • 1 cup of vanilla pudding (prepared)
  • 1/2 cup sweetened condensed milk
  • 1 tsp coconut extract
  • 1 cup whipped topping or whipped cream
  • 1/2 cup toasted coconut flakes
  • 6 mini graham cracker crusts
  • Colorful sanding sugar or glitter sugar, if desired.

Instructions

  1. With a hand mixer or stand mixer, beat the cream cheese until smooth.
  2. Use a spoon to mix in the vanilla pudding, condensed milk, and coconut extract until completely combined.
  3. Fold in whipped topping until you don’t see any streaks.
  4. Unwrap the premade mini graham cracker crusts and arrange them on a flat surface.
  5. Divide the filling between the pies and refrigerate for 2-3 hours or until the pies only jiggle slightly.
  6. Top with toasted coconut flakes and glittery sugar if desired.
