Barbie Pink Cookies

  • 1 box strawberry cake mix (or white if you don’t want the strawberry flavor. It’ll taste just like a frosted sugar cookie!)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • Optional: Pink food coloring

Ocean Blue Cookies

  • 1 box white or vanilla cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • Blue food coloring

Sweet Vanilla Frosting

  • 2 sticks salted butter, softened
  • 3 1/2 cups powdered sugar
  • 35 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Optional: Pink, blue, or white sanding sugar for decoration

Instructions

Barbie Pink Cookies

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the cake mix, oil, and eggs until smooth.
  3. Add a few drops of pink food coloring, if using.
  4. Scoop dough into 1.5-tablespoon balls and place 2 inches apart.
  5. Bake for 8–10 minutes, until set at the edges. Let cool completely.

Ocean Blue Cookies

  1. Combine all ingredients in a large bowl and stir until dough forms.
  2. Tint the dough with blue food coloring to your desired shade.
  3. Scoop and bake the same way as the pink cookies. Let cool before assembling.

Sweet Vanilla Frosting

  1. Beat the butter on medium speed until creamy and smooth.
  2. Gradually mix in powdered sugar, then add heavy cream and vanilla.
  3. Beat on high speed for 2–3 minutes until the frosting is light and fluffy.

To Assemble

  1. Spread or pipe a swirl of vanilla frosting onto the flat side of each blue cookie.
  2. Top with a pink cookie to create a sandwich.
  3. If you like a little sparkle, roll the edges in sanding sugar.
  4. Repeat with the remaining cookies.
