Pistachio Cookies

  • 1 box white cake mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon pistachio extract
  • Aqua gel food coloring
  • Finely chopped pistachios, for topping
  • Edible gold flakes (optional)

Orange Sugar Cookies

  • 1 box orange cake mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 teaspoon orange extract

Orange Blossom Vanilla Buttercream

  • 1 stick salted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange extract
  • 23 tablespoons heavy cream

Instructions

Pistachio Cookies

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine cake mix, oil, eggs, pistachio extract, and food coloring until smooth.
  3. Scoop into 1½-tablespoon balls and place on prepared sheets.
  4. Sprinkle with chopped pistachios. Bake 8–10 minutes or until set around the edges. While warm, sprinkle with gold flakes if using. Cool completely.

Orange Sugar Cookies

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine cake mix, oil, eggs, and orange extract.
  3. Scoop into 1½-tablespoon balls and place on sheets.
  4. Bake 8–10 minutes or until the edges are lightly golden. Cool completely.

Orange Blossom Vanilla Buttercream

  1. In a large bowl, beat butter until light and fluffy.
  2. Mix in half of the powdered sugar, followed by extracts and cream.
  3. Add remaining sugar and beat until smooth and pipeable.

Assembly

  1. Lay the pistachio cookies upside down.
  2. Pipe or spread buttercream onto each.
  3. Top with an orange sugar cookie and gently press to sandwich.
  4. Repeat with remaining cookies.
