Lucky Charms Swirl Cookie Cups

  • 1 package Lucky Charms cookie dough
  • 2 sticks salted butter, softened
  • 3½ cups powdered sugar
  • 4 to 6 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Pastel food coloring
  • Shamrock sprinkles

Instructions

  1. Preheat oven to 350°F. Lightly spray a mini muffin tin.
  2. Separate the cookie dough into the 12 pre-cut rounds. Cut each round in half so you have 24 pieces total.
  3. Press one piece into each mini muffin well, pressing into the bottom and slightly up the sides to form a cup shape.
  4. Bake for 10 to 13 minutes, until lightly golden around the edges.
  5. Let the cookie cups cool in the pan. Gently twist each one to loosen it and remove them from the tin.
  6. For the buttercream, beat the softened butter until smooth and creamy. Add powdered sugar, heavy cream, and vanilla. Beat until light and fluffy, adding more cream as needed for a smooth, pipeable consistency.
  7. Divide the buttercream into three bowls. Leave one white and tint the other two with pastel colors of your choice.
  8. Transfer to piping bags fitted with a 1M star tip. Pipe tall swirls into each cooled cookie cup.
  9. Finish with shamrock sprinkles and serve.
