  1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  2. In a large bowl, stir together the rolled oats, honey, melted butter, brown sugar, and vanilla until everything is evenly coated.
  3. Spread the mixture into an even layer on the prepared baking sheet.
  4. Bake for 18 to 22 minutes, stirring once halfway through, until lightly golden and fragrant.
  5. Let the granola cool completely on the pan. It will crisp up as it cools.
  6. Once fully cooled, gently fold in the Lucky Charms marshmallows and white chocolate chips.
  7. Store in an airtight container at room temperature.
