Loaded “Minter” Brownies

  • 1 box of brownie mix + the ingredients listed on the box
  • 56 Mint Oreos, chopped
  • 1/2 cup Andes Peppermint Crunch Baking Chips
  • 1/3 cup Andes Cookie Crunch Mints
  • Chocolate frosting and Ghirardelli Peppermint Bark mix, if desired
Frosting recipe if using:
  • 1 stick of salted butter
  • 2 cups powdered sugar
  • 24 tbsp heavy cream
  • 1 tsp vanilla
  • 1/4 cup cocoa powder

Instructions

  1. Preheat your oven to 350 degrees and line a 9″ square dish with parchment paper and spray with baking spray.
  2. Prepare the brownie mix according to the package. Fold in the Oreos, peppermint crunch, and peppermint cookie mints.
  3. Spread the brownie batter into the prepared dish and bake as directed on the box.
  4. Let the brownies cool completely and then top them with chocolate frosting: either homemade or store-bought. Sprinkle the peppermint bark mix and then cut into bars and serve.
  5. If you’re making the frosting, beat the butter until smooth. Add in half of the sugar and mix. Add in the rest of the sugar, cream, vanilla, and cocoa powder. Mix until completely smooth.
