  • ½ cup chopped pecans
  • ¼ cup corn syrup
  • ¼ cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1 tablespoon melted butter
  • 1 package mini graham cracker crusts
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, whisk together the pecans, corn syrup, brown sugar, egg, vanilla, and melted butter until well combined.
  3. Spoon the mixture into the mini crusts, filling nearly to the top.
  4. Bake for 18–20 minutes, until the filling is golden and set.
  5. Let cool completely, then top with whipped cream if you’d like.
