BBQ Chicken Sandwiches

Ingredients

  • 1 1/4 cups ketchup, preferably organic
  • 1 cup stevia dark brown sugar substitute
  • 2 T apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon worcestershire sauce
  • 2 T Dijon mustard
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon pepper
  • 3 pounds chicken breast
  • 1 c chicken broth
  • Dave’s Bread Buns Done Right

Instructions

  1. To make the shredded chicken, place it in an instant pot with 1 cup of chicken broth. Set timer for poultry setting or manual setting on high pressure for 30 minutes.
  2. When finished, let pressure come down or release.
  3. Remove chicken from pot and shred chicken using two forks.
  4. For the sauce- Mix all of the remaining ingredients together in a medium pot and bring to a boil.
  5. Stir occasionally and let reduce heat and let simmer for 8 -10 minutes
  6. Place shredded chicken in a bowl, top with the bbq sauce, mix, and serve with buns.
