Instructions
Preheat your oven to 350 degrees and line baking sheets with parchment paper.
In a medium bowl combine the cake mix, vegetable oil, and eggs. Using a small 1” cookie scoop, add dollops of dough to the cookie sheets about 2” apart. Bake them for 9-11 minutes or until set and lightly golden brown. These cookies shouldn’t be hard. They’re much better on the softer side for a cookie sandwich. This way when you bite into the cookie the frosting doesn’t come out the sides.
Let the cookies cool completely on wire racks.
After the cookies have cooled, drizzle each one with orange and pink lines like Big Birds legs.
While the cookies are cooking beat the butter until smooth. Add in the powdered sugar, vanilla, heavy cream and mix. Add in the crushed cookies and mix. If it’s too thick add in more heavy cream 1 tbsp at a time.
Fill a piping bag with a rounded tip and transfer the frosting to the bag. Alternatively, you can add the frosting to the cookies with a knife.
Pipe or spread the frosting onto the bottom of one cookie. Top it with another and repeat with the rest.
