  • 1 box yellow or white cake mix
  • 1/2 cup (1 stick) butter, melted
  • 1 egg3/4 cup lemon curd
  • Powdered sugar, for topping

Instructions

  1. Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper.
  2. In a bowl, mix cake mix, melted butter, and egg until crumbly dough forms.
  3. Press 2/3 of the dough into the bottom of the pan.
  4. Spread the lemon curd evenly over the base.
  5. Crumble remaining dough over the top.
  6. Bake for 25–30 minutes until golden and set.
  7. Cool completely, then dust with powdered sugar. Slice into bars and serve.
