In a small bowl, stir together the cream cheese, shredded cheese, and sliced jalapeños until smooth and evenly mixed.
Spread the jalapeño cheese mixture over one side of each bread slice. Layer on the crispy bacon, then drizzle lightly with honey.
Sandwich the slices together and butter the outsides generously.
Heat a skillet or panini press over medium heat. Grill the sandwich until the bread is golden brown and the cheese is melted, about 3–4 minutes per side.
