Ice Cream Cookie Cups

Ingredients

  • 1 package red velvet cookie mix (plus the ingredients listed on the package) – or swap in your favorite cookie flavor!
  • Ice cream of your choice – I went with Ben & Jerry’s Strawberries and Cream
  • Colorful sprinkles
  • Mini baking containers – These are the ones I used. You can also use ramekins or a more generic shape like square containers or circles.

Instructions

  1. Preheat the oven according to your cookie mix package.
  2. Grease the baking containers (or small ramekins) with nonstick spray.
  3. Mix up the cookie dough as directed on the package. Press dough into each container, filling them about ¼ of the way full.
  4. Bake for the lowest time suggested on the package. Check for doneness and bake in short increments if needed. Let cool completely.
  5. Soften your ice cream on the counter for about 10–15 minutes (or until scoopable but not melty).
  6. Scoop ice cream into each cooled cookie cup, filling to the top. Sprinkle on some sprinkles, then pop them back in the freezer until firm.
  7. Let sit out for a few minutes before serving, just until they’re soft enough to dig in. Enjoy every bite!
