Banana Bread

  • 2 large ripe bananas, mashed
  • ⅓ cup melted butter or oil
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup chopped Biscoff cookies

Biscoff Swirl

  • ½ cup Biscoff cookie butter, warmed until pourable

Topping

Instructions

  1. Preheat the oven to 350°F. Place mini loaf pans on a baking sheet and lightly grease if needed.
  2. In a large bowl, stir together the mashed bananas, melted butter, brown sugar, egg, and vanilla until smooth.
  3. Add the flour, baking soda, salt, and cinnamon. Stir just until combined.
  4. Fold in the chopped Biscoff cookies.
  5. Spoon the batter into the mini loaf pans, filling each about halfway full.
  6. Drizzle about 1 tablespoon of warmed cookie butter over each loaf, then gently swirl with a knife or skewer.
  7. Bake:
    • Mini loaves: 18–20 minutes
    • Full loaf: 45–55 minutes
    Bake until the tops are golden and a toothpick inserted comes out clean.
  8. Sprinkle with holiday glittery sugar while still warm. Let cool before serving.
