For the Bars:

  • 1 ½ cups almond flour
  • 1 cup oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup unsweetened applesauce
  • ⅓ cup Swerve Brown Sweetener
  • ¼ cup melted coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • ¾ cup finely grated carrots (about 2 medium carrots)
  • ¼ cup chopped walnuts or pecans

For the Frosting:

  • 6 oz reduced-fat cream cheese, softened
  • 2 tbsp butter, softened
  • 23 tbsp Swerve Confectioners Sweetener
  • ½ tsp vanilla extract
  • Cinnamon for sprinkling (optional)

Instructions

Instructions:

  1. Preheat your oven to 350°F and line an 8-inch baking dish with parchment paper.
  2. In a medium mixing bowl, whisk together the almond flour, oat flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, combine the applesauce, Swerve Brown Sweetener, melted coconut oil, egg, and vanilla extract, whisking until smooth. Stir in the grated carrots.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Incorporate the chopped nuts.
  5. Spread the batter evenly into the prepared dish. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the bars to cool completely before frosting.
  6. For the frosting, beat the softened cream cheese and butter together until smooth and creamy. Slowly mix in the Swerve Confectioners Sweetener and vanilla extract until fully incorporated.
  7. Spread the frosting over the cooled bars and sprinkle with a dash of cinnamon, if desired!
