Grilled Quesadilla Rollups

Ingredients

  • 10 small flour tortillas (street taco size works best)
  • 2 cups shredded cheese (Mexican blend, cheddar, or pepper jack)
  • 2 cups cooked ground beef taco meat (or swap with shredded chicken or pulled pork)
  • ½ cup salsa or taco sauce
  • 2 tbsp melted butter
  • Optional: sour cream, guacamole, or ranch for dipping

Instructions

  1. Preheat the grill to medium-high heat (375–400°F).
  2. Lay one tortilla flat. Sprinkle with cheese, add 2 tablespoons of taco meat, drizzle with salsa or taco sauce, then top with a little more cheese.
  3. Roll up tightly like a taquito, tucking in the sides if needed.
  4. Brush all sides lightly with melted butter.
  5. Place rollups directly on the grill grates or on a grill mat. Cook 2–3 minutes per side, until golden and the cheese is melted.
  6. Slice in half if desired and serve with dipping sauces.
