Press a ring of pumpkin cookie dough around the edge of the skillet. Then add a layer of sugar cookie dough next to that. Add another small ring of pumpkin dough, then a final piece of sugar cookie dough.
Gently press 8–10 turkey cookies evenly across the top.
Bake 20–25 minutes, checking around 15. When the edges turn lightly golden but the center is still soft, pull it from the oven.
Let it rest for 5–10 minutes so it sets slightly but stays gooey.
Serve warm with scoops of vanilla ice cream, a drizzle of caramel, and fall sprinkles.
