- Preheat the oven to 375°F. Line a baking sheet with foil and lightly spray with nonstick spray.
- Using a serrated knife, cut the bread into a grid pattern—slice almost all the way down, both vertically and horizontally, to create cubes, but don’t cut through the bottom.
- In a small bowl, stir together melted butter, garlic, parsley, Italian seasoning, and garlic powder.
- Use your fingers or a spoon to gently open the cracks. Drizzle the garlic butter into the cuts, letting it soak in. Then stuff shredded mozzarella and a sprinkle of parmesan into each crevice.
- Wrap the whole loaf in foil and bake for 15 minutes. Uncover and bake for another 10 minutes, until the top is golden and melty.
Serve hot: Garnish with red pepper flakes or chives, and pull pieces straight from the loaf.
