Freezer Meal Breakfast Taco Pockets

Ingredients

  • 6 large flour tortillas
  • 6 eggs, scrambled
  • ½ cup cooked breakfast sausage or crumbled bacon
  • ½ cup shredded cheddar cheese
  • ¼ cup mild salsa
  • Cooking spray or a little oil for cooking

Instructions

  1. Cut each tortilla in half to make semi-circles.
  2. On each half, spoon a little scrambled egg, sausage or bacon, cheese, and a touch of salsa.
  3. Fold into a triangle pocket and press the edges with a fork to seal.
  4. Wrap each pocket tightly in plastic wrap or foil and freeze until ready to enjoy.

Notes

To Reheat
Skillet: Toast in a lightly oiled skillet over medium heat until golden and heated through.
Air Fryer: Cook at 375°F for 6–8 minutes until crisp and hot inside.
