Let the cookie dough sit at room temperature just until it’s soft enough to press easily.
Preheat the oven to 350°F and lightly spray a 9-inch skillet with cooking spray.
Press the cookie dough evenly into the skillet, making sure it reaches the edges. Sprinkle rainbow sprinkles throughout the dough.
Gently press the Elf character cookies into the dough, spacing them about 1 to 2 inches apart. You don’t need to use the entire package.
Bake for 22-28 minutes, until the edges are set but the center is still warm and gooey.
Let the skillet sit for 5-10 minutes then top it with scoops of sugar cookie ice cream, drizzle generously with caramel sauce, and finish with gummies and gumdrops. Serve right away while everything is melty.
