Easy Cookie Bars

Cookie bars that are so easy, you’ll find any excuse to make them! All you need is a semi-homemade mix of store-bought cookie dough and homemade buttercream.

Ingredients

  • 1 pkg Pillsbury Ready-to-Bake chocolate chip cookies, thawed to room temperature
  • 1 stick of butter, softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla
  • 1 tsp heavy cream
  • rainbow sprinkles

Instructions

  1. Preheat oven to 350 degrees and line an 8″ square pan with parchment paper.
  2. Spread softened cookie dough in a layer at the bottom of the pan. You’ll have to press to get the cookies to come together. Be sure to make the center slightly higher than the edges since they’ll rise the most.
  3. Bake for 25-30 minutes until golden brown. Let cool completely.
  4. In a mixing bowl, beat the butter until smooth. Add in the powdered sugar, cream, and vanilla. Mix until smooth.
  5. Remove the cookies from the pan by lifting them out holding the edges of the parchment sheet.
  6. Spread the frosting onto the cooled cookies and top with rainbow sprinkles. Serve or refrigerate for more of a “bar-style” dessert.
