Cool & Tangy Cucumber Salad

  • 2 regular cucumbers or 1 large English cucumber (assorted cucumbers work as well)
  • ½ medium red onion, finely chopped (small pieces make all the difference)
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon dried dill (or fresh if you prefer — dried adds a punchier flavor)
  • ½ tablespoon vinegar (white, apple cider, or white wine)
  • Salt and pepper to taste

Instructions

  1. Peel and very thinly slice the cucumbers — paper-thin is best. A mandolin or even a metal cheese slicer works great.
  2. Finely chop the red onion so the flavor blends in without overpowering.
  3. Combine the cucumbers and onion in a large bowl.
  4. Add sour cream, mayo, vinegar, dill, salt, and pepper. Mix until every slice is coated.
  5. Cover and chill for at least 30 minutes, ideally an hour or more. The cucumbers will release a little water, turning the dressing into a light, creamy coating.
