Cookie Monster-Inspired Krispies Treats

- 6 cups Rice Krispies cereal
- 4 tablespoons butter
- 1 (10 oz) bag mini marshmallows
- 1/4 teaspoon vanilla extract (optional, but delicious)
- Blue gel food coloring
- 1/2 cup chocolate chip cookies (like Chips Ahoy), roughly chopped
- 1/3 cup Oreos, lightly crushed
- 1/2 cup white chocolate chips
- Candy eyes, for decorating
- Extra crushed cookies, for topping
Instructions
- In a large pot over low heat, melt the butter. Add the marshmallows and stir until completely melted and smooth.
- Stir in the vanilla and a few drops of blue gel food coloring until you reach your desired Cookie Monster shade.
- Remove from heat and fold in the Rice Krispies until fully coated.
- Gently stir in the chopped cookies, crushed Oreos, and white chocolate chips.
- Press the mixture into a 9×13 pan sprayed with baking spray, using a buttered spatula or fondant smoother to smooth the top.
- While still warm, press candy eyes and extra cookie crumbles on top.
- Let cool completely, then cut into squares and serve to your favorite cookie monsters.
