1/2 cup crushed chocolate chip cookies, like Chips Ahoy (about 6 cookies)
1/4 cup mini chocolate chips
Blue food coloring
Topping:
1/2 cup crushed Oreos (about 6 cookies)

Instructions
Preheat the oven to 350 degrees. Spray a 9 x 13 baking dish with baking spray and line it with parchment paper. The bars will be easier to pull out!
In a medium bowl, mix the cake mix, melted butter, and egg until well combined.
Fold in the mini chocolate chips.
Press the mixture evenly to the base of the pan. It can be a bit tricky, but there’s definitely enough for the whole crust layer!
In a large bowl, beat the cream cheese until smooth.
Add in the eggs and vanilla and mix until combined.
Gradually add in the powdered sugar, and mix until smooth.
Add the food coloring to the desired shade of blue and mix until you don’t see any color streaks. Fold in the crushed cookies and mini chocolate chips.
Pour the gooey mixture over the crust and spread it evenly.
Sprinkle the crushed Oreos and chocolate chip cookies on top.
Bake for 40-45 minutes. The center should still be slightly jiggly (this helps it stay gooey) but set around the edges.
Remove the pan from the oven and let it cool completely.
I love to refrigerate mine overnight because it gives it the BEST texture! When you’re ready to eat it, slices into squares or rectangles and serve.
