For the cookies-

  • 1 box of white cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • Blue food coloring
  • 1/2 cup mini chocolate chips
  • 3 Oreos broken into small pieces

For the cookie dough frosting-

  • 1 stick of salted butter
  • 1 1/2 cups powdered sugar
  • 1/3 cup packed light brown sugar
  • 1/3 cup all purpose flour, heat treated (this can be done in the oven or microwave)
  • Pinch of salt
  • 23 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and line cookie sheets with parchment paper.
  2. In a medium bowl, combine the cake mix, oil, and eggs. Add the blue food coloring and stir until there are no streaks. This batter gets thick so be prepared for a workout! Fold in the mini chocolate chips and Oreos.
  3. Bake for 10-11 minutes or until lightly golden and set. These cookies are best for cookie sandwiches when they are really soft. Be sure not to overbake…if they’re a little too soft it’s better than too hard. If you do feel like they’re too soft, refrigerate them after they’ve cooled for at least an hour.
  4. In a medium bowl, beat the butter, powdered sugar, brown sugar, flour, salt, heavy cream, and vanilla until it’s completely combined and fluffy. *Note, to heat treat the flour, you just need to bake or microwave it. There are tons of instructions on google for your preferred method. Overall, it kills any bacteria making it safe to eat.
  5. Fold in the mini chocolate chips.
  6. To assemble, lay one cookie flat and upside down. Add a swirl of cookie dough frosting. You can use a piping bag with a large opening or just add it with a knife. Frost 12 of the cookies, dividing the buttercream evenly. Top each with another cookie. Serve or refrigerate until it meets your desired texture. Again, if it’s too soft for your taste, just leave it in the fridge for a couple of hours 🙂
