Cookie Dough Stuffed Oreos

  1. Twist the Oreos to separate the tops from the bottoms.
  2. Scoop out a small amount of cookie dough (about half a disc), roll it into a ball, and place it on the center of the bottom half of the cookie.
  3. Press the top cookie back on to sandwich the dough, gently flattening it.
  4. Repeat with the remaining cookies and refrigerate the cookie sandwiches for 30 minutes to firm up.
  5. Melt the Ghirardelli chocolate wafers in a shallow bowl according to package instructions.
  6. Use a fork to dip each sandwich into the melted chocolate until fully coated. Tap the fork gently against the bowl to remove excess chocolate.
  7. Place dipped cookies on a parchment-lined baking sheet and immediately top with rainbow sprinkles before the chocolate sets.
  8. Let the coating firm up at room temperature.
